February- Farmer of the Month

   Farm to Tin is here to keep our guests (that's you) informed on what exactly it is we're feeding you and where it's coming from. We intend to shine light on the farmers, purveyors, suppliers we work alongside in our community. A behind the scenes of sorts; one that gives us all a chance to acknowledge and thank the hardworking neighbors who grow, harvest, and craft the ingredients we use every day at The Cookie Tin.

   This February, The Cookie Tin would like to introduce you to Eduardo Aguilar! Eduardo is the Tin's first featured Farmer of the Month, he is a fresh produce farmer based in Ontario with a great eye for picking the most delicious fruits and veggies from the farm he is a part of. 

   Ian's Farm is family owned and has been going strong for 13 years. This month Eduardo brought in some beautifully vibrant strawberries. We tried to do them justice by making them the star of our Spring Greens Seasonal Salad. Alongside the strawberries we throw on some toasted almonds, fennel, feta cheese, and our homemade Berry Balsamic Dressing. 

   The Salad won't be the only strawberry heavy item on the menu however, there will also be plenty of pastries, cookies of course, and a fresh strawberry latte. You'll have to come in and try for yourself. If you want to find out more about Eduardo and Ian's farm or you just wanna purchase some delicious produce, you can find him on 5th and Main street on Saturday mornings during Downtown Riverside's weekly farmers market. He won't be hard to find, he'll be the happiest guy there.
